Delicious 10-minute dessert: blueberries, whipped cream, and thyme on toasted brioche buns.
Ingredients:
  • 200g Eureka blueberries
  • 30.00 gm caster sugar
  • 4 slices of brioche, toasted
  • Whipped cream, to serve (see note)
  • Thyme leaves, to serve (see note)
Instructions:
  • In a hot frying pan, combine blueberries and sugar. Stir and cook for 2-3 minutes until blueberries begin to release their juices.
  • Spread a dollop of whipped cream over each brioche slice. Spoon blueberries on top. Optionally, sprinkle with thyme for added flavor.
