"Delightfully fruity and refreshing muffins that will brighten your day! Feel free to swap in raspberries or blueberries and choose from strawberry, banana, or vanilla yogurt options."
Ingredients:
  • 1 cup all-purpose flour
  • 0.75 cup cornmeal
  • 0.5 cup white sugar
  • 2.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 2 cups chopped fresh strawberries
  • 1 (8 ounce) container naturally flavored strawberry yogurt
  • 0.25 cup butter, melted
  • 1 egg, lightly beaten
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin tin with a light greasing or paper liners.
  • Combine and sift flour, cornmeal, sugar, baking powder, and salt in a large bowl. Toss strawberries in 1/2 cup of the flour mixture in a separate bowl.
  • Combine yogurt, melted butter, and egg, whisking until smooth. Gently fold the yogurt mixture into the flour mixture until just combined. Carefully fold in fresh strawberries. Divide the batter into the muffin cups and bake to golden perfection.
  • Bake in a hot oven for 25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
