Delicious raspberry almond coffee cake with a delectable glaze, a family favorite treat.
Ingredients:
  • 1 cup all-purpose flour
  • 0.33333334326744 cup white sugar
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 egg
  • 0.5 cup reduced-fat plain yogurt
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 3 tablespoons brown sugar
  • 1 cup fresh or frozen raspberries
  • 1 tablespoon slivered almonds
  • 0.25 cup confectioners' sugar
  • 1 teaspoon fat free milk
  • 0.25 teaspoon vanilla extract
Instructions:
  • 1. Preheat the oven to a toasty 350 degrees F (175 degrees C), then gently coat an 8-inch round cake pan with nonstick cooking spray.
  • Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl. In a separate bowl, whisk together the egg, yogurt, butter, and 1 teaspoon vanilla extract. Mix the egg mixture into the flour until combined. Combine raspberries and brown sugar in a small bowl.
  • Add two-thirds of the batter into the cake pan, then generously sprinkle with raspberries and almonds. Top with the remaining batter to cover the raspberries completely.
  • Bake the cake in a preheated oven for 35 to 40 minutes, until it springs back when lightly touched. Allow it to cool.
  • Combine sugar, milk, and 1/4 teaspoon of vanilla extract until smooth to create the glaze. Drizzle it over the cooled coffee cake and serve at room temperature.
