Berry Yogurt Crunch

Delicious summer berry parfait with creamy yogurt and vanilla pudding, topped with a crunchy cereal twist. Perfect for breakfast or dessert.
Ingredients:
  • 3 cups plain low-fat yogurt
  • 1 (1.5 ounce) envelope instant sugar-free vanilla pudding mix
  • 2 cups blueberries, raspberries and sliced strawberries, mixed
  • 0.75 cup wheat and barley nugget cereal (e.g. Grape-Nuts™)
  • 1 cup blueberries, raspberries and sliced strawberries, mixed
  • 1 tablespoon white sugar
  • 1 tablespoon fresh lemon juice
  • 0.5 cup sweetened whipped cream for garnish
Instructions:
  • In a large bowl, mix together the yogurt and pudding mix using an electric mixer for 1 to 2 minutes until smooth. Gently fold in 2 cups of mixed berries and the cereal until combined. Transfer the mixture to a 9-inch pie plate, cover with plastic wrap, and refrigerate for 2 hours before serving.
  • In a medium bowl, gently crush the remaining 1 cup of berries with a fork. Combine with sugar and lemon juice, then let sit at room temperature.
  • Ladle the chilled berry-yogurt mixture into serving dishes, then add a dollop of mashed berries and whipped cream, if preferred.
