Summer pudding with sweet berries and crunchy nuts/seeds.
Ingredients:
  • 400.00 gm traditional rolled oats
  • 27.50 gm coconut flakes
  • 10.00 gm mixed spice
  • 6.00 gm baking powder
  • 386.25 gm milk
  • 2 x 120g tubs apple purée
  • 178.75 gm honey, plus extra to serve
  • 125.00 ml frozen raspberries
  • 125.00 ml frozen blueberries
  • 20.00 ml pepita and sunflower seed mix
  • 62.50 ml almond kernels, roughly chopped
  • 250.00 ml low-fat coconut yoghurt, to serve
Instructions:
  • Preheat your oven to 180C/160C fan-forced and grease a 4cm-deep enamel baking dish measuring 17cm x 22cm at the base and 20.5cm x 26cm at the top.
  • In a large bowl, mix oats, coconut, mixed spice, and baking powder. In a medium bowl, whisk together eggs, milk, apple purée, and honey. Combine the egg mixture with the oat mixture. Pour the mixture into the pan and top with berries, seed mix, and almonds. Bake for 25 to 30 minutes until golden and set. Let it rest for 5 minutes before drizzling with extra honey and serving with yogurt.
