Grilled BBQ chicken with a sweet brown sugar rub and homemade sauce, smoked to perfection for a juicy and succulent dish!
Ingredients:
  • 2 tablespoons brown sugar
  • 2 large cloves cloves garlic, chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 10 chicken drumsticks
  • 2 tablespoons vegetable oil
  • 0.5 cup finely chopped onion
  • 0.75 cup ketchup
  • 2 tablespoons white wine vinegar
  • 2 tablespoons Worcestershire sauce
Instructions:
  • Create a flavorful paste by mashing brown sugar, garlic, salt, and pepper in a mortar and pestle. Transfer the paste to a resealable plastic bag and add the chicken. Ensure the chicken is coated with the paste, then remove any excess air, seal the bag, and let it marinate in the refrigerator for at least 1 hour to overnight for optimal flavor.
  • Heat oil in a small saucepan over medium heat, then sauté onion until softened, around 5 minutes. Add ketchup, vinegar, and Worcestershire sauce, and simmer until flavors blend, about 10 minutes.
  • Preheat your outdoor grill to medium heat and lightly oil the grate while you take the chicken out of the bag.
  • Grill chicken until beautifully browned, 3 to 5 minutes per side. Then, move chicken to indirect heat by turning off one burner and keeping the temperature at 300 to 350 degrees F (150 to 175 degrees C).
  • Roast chicken for 20 minutes, flipping once. Brush with sauce, then roast, brushing every 10 minutes, until chicken is fully cooked and juices run clear, for an additional 20 to 25 minutes. Make sure internal temperature reaches 165 degrees F (74 degrees C).
