Crunchy chicken casserole with water chestnuts and cornflakes for extra texture.
Ingredients:
  • 4 skinless, boneless chicken breasts
  • 1 onion, chopped
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) can water chestnuts
  • 1 cup mayonnaise
  • 1 cup cornflakes cereal crumbs
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) for the perfect cooking temperature.
  • 1. Bring a large pot of water to a rolling boil. 2. Simmer chicken until fully cooked and no longer pink, for about 12 to 15 minutes. 3. Ensure chicken reaches 165°F (74°C) with an instant-read thermometer. 4. Drain and dice chicken into bite-sized pieces.
  • Combine chicken, onion, condensed soup, water chestnuts, mayonnaise, and most of the cornflake crumbs in a large bowl. Transfer the mixture to a 9x13-inch casserole dish and top with the remaining cornflake crumbs.
  • Bake the casserole in the oven until it is heated through and the top turns a beautiful golden brown, which should take about 1 hour.
