Speedy Mexican-inspired casserole: Mix shredded chicken, soup, and tomatoes. Layer with tortillas, top with cheese, and done!
Ingredients:
  • 6 cooked chicken breasts, shredded
  • 1 (10.75 ounce) can cream of chicken soup
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 0.5 cup chicken broth
  • 0.5 cup chopped onion
  • 1 (4 ounce) can chopped green chiles
  • 6 corn tortillas, torn into strips - or more as needed
  • 2 cups shredded Monterey Jack cheese, or more to taste
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Combine chicken, cream of chicken soup, cream of mushroom soup, diced tomatoes with green chiles and juice, chicken broth, onion, and canned green chiles in a bowl, stirring until well mixed.
  • Create a base layer in a 9x13-inch baking dish with one-third of the tortilla strips, followed by one-third of the chicken mixture. Repeat this process two more times. Finish by sprinkling Monterey Jack cheese on top of the casserole before baking.
  • Bake in the preheated oven for 20-25 minutes until the cheese is golden brown and the casserole is bubbling. Let it stand for 5-10 minutes to firm up if still slightly runny.
