Grilled veggie sandwich with mozzarella, tomato, and basil pesto on whole-grain baguette.
Ingredients:
  • 0.5 zucchini, cut crosswise into 1/2-inch slices
  • 0.5 small eggplant, cut crosswise into 1/2-inch slices
  • 1 red bell pepper, quartered
  • 0.5 teaspoon salt
  • 1.5 teaspoons olive oil
  • ground black pepper to taste
  • 1 small whole-grain baguette, cut into two halves and split lengthwise
  • 0.25 cup basil pesto
  • 4 ounces fresh baby mozzarella, sliced
  • 2 plum tomatoes, sliced
Instructions:
  • In a bowl, mix zucchini, eggplant, and red bell pepper. Sprinkle salt over the vegetables and let them sit for at least 3 hours to tenderize.
  • Preheat the grill to medium heat and brush the grate lightly with oil.
  • Remove excess moisture from the vegetable mixture. Coat vegetables with olive oil and season generously with black pepper.
  • Grill veggies over high heat until tender, about 2 to 3 minutes per side. Remove from grill and place in a bowl.
  • Toast the baguette halves in a toaster oven until golden brown, about 2 to 3 minutes. Spread basil pesto on the toasted sides. Evenly layer grilled vegetables on 2 baguette halves. Add sliced mozzarella and plum tomato slices, then finish by topping with the remaining baguette halves. Serve and enjoy!
