My favorite crowd-pleasing sheet cake, perfect for gatherings and kids' birthdays - a simple and beloved classic!
Ingredients:
  • 1 tablespoon unsalted butter
  • 1.75 cups unsalted butter
  • 2 cups white sugar
  • 2 teaspoons vanilla sugar
  • 6 large eggs
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 lemons, zested
  • 1.75 cups confectioners' sugar
  • 0.25 cup lemon juice
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), then generously grease a rimmed baking sheet with a luscious tablespoon of butter.
  • In a large bowl, mix butter, sugar, and vanilla sugar until smooth and creamy using an electric mixer. Add eggs one at a time, beating well after each addition. Gradually mix in flour and baking powder on low speed until fully combined, then fold in lemon zest.
  • Using the back of a spoon, gently spread the sticky dough on the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes until completely set. Allow to cool for 30 minutes before serving.
  • Combine the confectioner's sugar and lemon juice in a small bowl, then generously brush the tantalizing glaze onto the cooled cake. Let it set and develop its flavors for approximately 15 minutes.
