Delicious pickled shrimp appetizer, perfect for prepping ahead and pairing with a crisp white wine.
Ingredients:
  • 1 cup apple cider vinegar
  • 0.5 cup olive oil
  • 0.25 cup lemon juice
  • 1 small red onion, thinly sliced
  • 1 medium lemon, thinly sliced
  • 1 medium Fresno chile, thinly sliced
  • 3 cloves garlic, smashed
  • 3 bay leaves, crushed
  • 2 tablespoons capers, roughly chopped
  • 1 teaspoon celery seed
  • 1 teaspoon lemon zest
  • 2 tablespoons seafood seasoning (such as Old Bay®)
  • 2 pounds large shrimp - peeled, deveined, and tails left on
Instructions:
  • In a large bowl, mix together vinegar, olive oil, lemon juice, onion, lemon slices, Fresno chile, garlic, bay leaves, capers, celery seed, and lemon zest until fully combined. Chill in the refrigerator as you get the shrimp ready.
  • In a large saucepan, bring 3 quarts of water combined with seafood seasoning to a boil. Add shrimp and cook for precisely 2 minutes. Drain thoroughly and mix with chilled onion mixture. Cover and refrigerate for 8 hours to overnight, or up to 4 days.
  • Enjoy this dish cold.
