Soulful black-eyed pea soup recipe, a taste of Southern comfort.
Ingredients:
  • 1 pound dry black-eyed peas
  • 1 (5 ounce) can ham
  • 1 carrot, chopped
  • 1 small onion, chopped
  • salt and pepper to taste
Instructions:
  • Soak the black-eyed peas in abundant water in a large pot for 6 to 8 hours or overnight.
  • Add the ham, carrot, onion, salt, and pepper to the pot and submerge all ingredients in water. Allow it to come to a boil, then lower the heat and simmer for 2 1/2 hours or until the black-eyed peas are tender. Remember to stir occasionally and add water if needed to keep everything covered.
