Cozy up with this easy, hearty split pea soup. Earthy split peas, veggies, and a hint of smoky ham bone create the perfect comfort meal. Just 6 ingredients for the best winter warmer.
Ingredients:
  • 2 1/4 cups dried split peas, (1 pound), sorted and rinsed
  • 8 cups water
  • 1 large onion, chopped (1 cup)
  • 2 medium celery stalks, finely chopped (1 cup)
  • 1 ham bone or 2 pounds shanks
  • 3 medium carrots, cut into 1/4-inch slices (1 1/2 cups)
Instructions:
  • Combine the split peas, water, onion, celery, and pepper in a 4-quart Dutch oven, then introduce the ham bone.
  • Bring to a boil then reduce heat. Cover and simmer for approximately 1 hour and 30 minutes or until peas are tender.
  • Take out the ham bone, separate the ham from the bone, and trim off any extra fat. Cut the ham into 1/2-inch pieces.
  • Combine the savory ham and fresh carrots into the soup and bring to a boil. Simmer with the lid on for around 30 minutes until the carrots are tender and the soup reaches your preferred thickness.
