Delicious tomato bread pudding, made with everyday ingredients, perfect for meal prep and crowd-pleasing.
Ingredients:
  • 0.5 cup water
  • 1 (14.25 ounce) can tomato puree
  • 1 tablespoon dried basil
  • 1 pinch salt to taste
  • 10 slices white bread, cubed
  • 0.25 cup butter, melted
Instructions:
  • Combine water and tomato puree in a saucepan over medium heat. Add brown sugar, basil, and salt, bring to a boil. Simmer gently for 5 minutes, then remove from heat.
  • Preheat the oven to 375 degrees F (190 degrees C) and generously spray a 2 quart casserole dish with cooking spray.
  • Add the bread cubes to the dish and generously drizzle with melted butter before evenly pouring the tomato sauce over the top. Cover the dish with either a lid or aluminum foil to seal in the flavors.
  • Bake uncovered for 50 minutes in a preheated oven.
