Pineapple-infused buttery cookie, soft like cake, with a delightful crunch.
Ingredients:
  • 4 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.75 teaspoon salt
  • 1 cup drained crushed pineapple
  • 1 cup vegetable shortening (such as Butter Flavor Crisco®)
  • 1 tablespoon lemon extract
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect temperature to bake your creation.
  • Combine the flour, baking soda, and salt by sifting them together in a bowl.
  • In a bowl, blend sugar, crushed pineapple, shortening, eggs, and lemon extract until well combined. Add the flour mixture to the pineapple mix and stir until just combined. Drop teaspoonfuls of dough 2 inches apart on baking sheets.
  • Bake in the preheated oven in batches for 12 to 15 minutes or until lightly browned. Then, cool on wire racks.
