Creamy butternut pumpkin dish made with skinny yogurt, no butter. Authentic flavor with less fat.
Ingredients:
  • 18.40 gm grapeseed oil
  • 1 large brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 3cm piece fresh ginger, peeled, grated
  • 1 cinnamon stick
  • 2 tsp garam masala
  • 1 tsp ground coriander
  • 2.50 gm smoked paprika
  • 1 tsp ground turmeric
  • 1/2 tsp dried chilli flakes
  • 400g butternut pumpkin, peeled, cut into 2cm pieces
  • 500ml (2 cups) salt reduced chicken style liquid stock
  • 70g (1/4 cup) tomato paste
  • 800g chicken breast fillets, cut into 4cm pieces
  • 125ml (1/2 cup) low-fat Greek yoghurt
  • 3.75 gm cornflour
  • Steamed basmati rice, to serve
Instructions:
  • In a saucepan over medium heat, warm olive oil. Add onion, garlic, and ginger and cook until soft, about 4 minutes. Add cinnamon, garam masala, coriander, paprika, cumin, turmeric, and chili, and cook for 1 minute until fragrant. Pour in pumpkin, stock, and tomato paste. Bring to a boil, then lower the heat. Simmer, partially covered, stirring occasionally, for 8-10 minutes until the pumpkin is tender. Add chicken and cook for 7 minutes until nearly done. Remove from heat and enjoy!
  • Transfer 2 tablespoons of the sauce to a heatproof bowl. Combine with yoghurt and cornflour until smooth. Gently mix into the chicken, stirring over low heat for 3 minutes until slightly thickened. Serve with rice.
