30-minute better-for-you chicken stir-fry, perfect for busy weeknights. Upgrade with soba or ramen noodles for a delicious twist.
Ingredients:
  • 270g pkt buckwheat noodles
  • 60ml (1/4 cup) honey
  • 7.50 gm cornflour
  • 18.20 gm extra virgin olive oil
  • 500g chicken tenderloins, excess fat trimmed
  • 300g broccoli, cut into small florets
  • 1 zucchini, halved lengthways, thinly sliced
  • 150g snow peas, trimmed, halved diagonally
  • 80g (1/2 cup) roasted unsalted cashews, coarsely chopped
  • 2 green shallots, thinly sliced diagonally
  • 3.00 gm sesame seeds, toasted
Instructions:
  • Prepare the noodles according to the package instructions. Drain and rinse under cold water before draining again.
  • In a small bowl, mix together honey, soy sauce, garlic, and 60ml (1/4 cup) water. Stir in cornflour until fully dissolved.
  • In a large, deep frying pan or wok over medium heat, heat half of the oil. Add the chicken and stir-fry for 3-4 minutes on each side until golden and cooked through. Remove the chicken from the pan and set aside on a plate.
  • Heat the remaining oil in the wok over medium-high heat. Stir-fry broccoli and zucchini until tender crisp for about 5 minutes (add a splash of water if necessary). Add in noodles, chicken, snow peas, sauce, and cashews, and cook for 2 minutes until the snow peas are tender crisp and the sauce thickens. Serve sprinkled with shallots and sesame seeds.
