Whip up this speedy and healthy chicken stir-fry in no time!
Ingredients:
  • 36.40 gm extra light olive oil
  • 750g chicken tenderloins, thinly sliced on diagonal
  • 8 green onions, trimmed, sliced diagonally
  • 89.38 gm honey
  • 65.63 gm lemon juice
  • 21.00 gm soy sauce
  • 250.00 ml roasted cashew nuts
  • Steamed jasmine rice, to serve
Instructions:
  • - Preheat a wok over high heat and add 2 teaspoons of oil, swirling to coat. Add one-third of the chicken and stir-fry for 2 to 3 minutes until golden. Remove to a plate. Repeat twice with remaining oil and chicken.
  • Pour the remaining oil into the wok and add the green onions. Stir-fry for 1 to 2 minutes until the onions are bright green. Add the chicken back to the wok.
  • In a wok, combine honey, lemon juice, soy sauce, and cashews. Stir-fry for 1 minute or until heated through. Serve with steamed jasmine rice and garnish with extra green onions, if preferred.
