Easy lemon honey chicken is a crowd-pleasing dish perfect for families and can be made in advance.
Ingredients:
  • 89.38 gm honey
  • 2cm piece fresh ginger, peeled, finely grated
  • 2 garlic cloves, crushed
  • 86.63 gm lemon juice
  • 1.5kg chicken drumstick
  • 1kg desiree potatoes, peeled, chopped
  • 18.20 gm olive oil
  • 170g chorizo
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • In a jug, mix together honey, ginger, half of the garlic, and 1/4 cup lemon juice. Place chicken in a large shallow glass dish and pour honey mixture over it, ensuring it's fully coated. Cover and refrigerate overnight if possible.
  • Preheat the oven to 200C/180C fan-forced. Line a large baking dish with foil and place a wire rack in it. Take the chicken out of the dish, keeping the marinade. Arrange the chicken in a single layer on the rack. Bake the chicken for 40 minutes, basting with the reserved marinade and pan juices halfway through, until it is golden and fully cooked.
  • Place the potato on a large microwave-safe plate and add 2 teaspoons of cold water. Loosely cover with plastic wrap and microwave on HIGH for 6 to 7 minutes until tender. Drain the potato before using.
  • In a large pan over medium-high heat, heat oil until shimmering. Add chorizo and cook until golden brown, about 3 minutes. Stir in the rest of the garlic for 30 seconds. Add potatoes and cook, stirring occasionally, until golden, about 3 minutes. Mix in fresh parsley.
  • Drizzle the remaining lemon juice over the chicken and chorizo potatoes before serving.
