Crispy skinned lemon chicken

Lemon-Honey Glazed Chicken: Drizzle with sweet-tangy sauce.
Ingredients:
  • 1 (about 1.8kg) fresh whole chicken, cut into portions
  • Salt, to season
  • 125ml honey
  • 125ml lemon juice
  • 21.00 gm thick soy sauce
  • 5cm piece fresh ginger, peeled, cut into matchsticks
  • 3.00 gm toasted sesame seeds
  • 1 lemon, cut into wedges
  • 2 green shallots, cut into matchsticks
  • Coriander leaves, to serve
  • Steamed jasmine rice, to serve
Instructions:
  • Preheat the oven to 200°C. Place the chicken, skin-side up, in a large roasting pan, season generously with salt, and roast for 20 minutes or until golden brown and fully cooked.
  • Combine the honey, lemon, soy sauce, and ginger in a saucepan over low heat. Stir and cook for 5 minutes until the sauce boils and thickens. Remove from heat.
  • Coat the chicken with a touch of the honey sauce and bake until the chicken caramelizes, about 10 minutes.
  • Heat a non-stick frying pan over high heat, then cook lemon wedges for 2 minutes per side until golden brown. Remove from heat.
  • Submerge the shallots in a refreshing ice water bath for 5 minutes to enhance their crispness. Drain thoroughly before using.
  • Plate the chicken elegantly. Drizzle with the remaining honey sauce and sprinkle with sesame seeds, green shallots, and coriander leaves. Serve alongside lemon wedges and steamed rice.
