Quick and simple honey lemon chicken stir-fry ready in 30 minutes!
Ingredients:
  • 60ml honey
  • 42.00 gm light soy sauce
  • 42.00 gm lemon juice
  • 5.00 gm cornflour
  • 20.00 ml sesame oil
  • 6 Australian Chicken Thigh Fillets, chopped
  • 1 red onion, cut into wedges
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 1 garlic clove, thinly sliced
  • 2 bunches baby broccoli, cut into 5cm pieces
  • 300g snow peas, ends trimmed
  • 300g jasmine rice
Instructions:
  • In a small bowl, mix together the sweet honey, savory soy sauce, tangy lemon juice, and thickening cornflour.
  • Start by heating a teaspoon of oil in a hot wok. Stir-fry a third of the chicken until golden brown and fully cooked, about 2-3 minutes. Transfer the cooked chicken to a plate. Repeat this process with the remaining chicken and two more teaspoons of oil in two separate batches.
  • Heat the remaining oil in the wok until sizzling. Stir-fry the onion, ginger, and garlic until lightly browned, about 2 minutes. Toss in the baby broccoli and snow peas, stir-frying for another minute until they turn bright green. Add the chicken back to the wok along with the honey mixture. Cook, stirring constantly, for 2-3 minutes until the sauce bubbles and thickens. Serve the delicious stir-fry over rice in individual bowls.
