Skinny Lemon Garlic Chicken with Broccoli

Elevate your chicken and broccoli with zesty thyme, garlic, honey, and lemon.
Ingredients:
  • 1 teaspoon olive oil
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 6 cups broccoli florets, cut into bite-size pieces
  • 1/4 teaspoon pepper
  • 1 lb uncooked chicken breast tenders (not breaded)
  • 1/4 cup reduced-sodium chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh thyme leaves
Instructions:
  • Preheat oven to 375°F and position racks in the upper and lower thirds of the oven.
  • Combine 1 teaspoon olive oil, 2 teaspoons honey, and 1/4 teaspoon salt in a large bowl. Add broccoli and toss until well coated. Transfer to an ungreased 15 x 10 x 1-inch pan and place in the oven. Reduce heat to 325°F and bake for 20 to 25 minutes, or until broccoli is tender when pierced with a knife.
  • In a medium bowl, combine 1 teaspoon of flavorful olive oil, 1/4 teaspoon of salt, and a touch of pepper. Add the chicken and toss until fully coated.
  • Preheat a 12-inch ovenproof skillet over medium-high heat. Sear the tenders for 4 to 5 minutes until the bottom is browned. Flip the tenders, add garlic and chicken broth on top, then transfer to the oven. Roast for 10 to 15 minutes until a thermometer reads 165° F when inserted into the thickest part of the chicken. Remember to handle the hot pan carefully when removing it from the oven.
  • Plate the broccoli and chicken evenly among 4 plates. Spoon the flavorful pan juices and garlic over the chicken and broccoli, then generously drizzle with zesty lemon juice. Finish by sprinkling with fragrant fresh thyme.
