Lemon and honey chicken

Whip up a quick and delicious chicken stir fry for a speedy dinner option.
Ingredients:
  • 21.00 gm soy sauce
  • 20.00 ml Chinese rice wine or dry sherry
  • 400g chicken breast fillets, thinly sliced
  • 18.20 gm peanut oil or canola oil
  • 42.90 gm honey
  • 60ml lemon juice
  • 15.90 gm soy sauce, extra
  • 1/2 tsp sesame oil
  • 2 green onions, sliced diagonally
  • 20.00 ml chopped coriander
Instructions:
  • Combine the soy sauce and rice wine in a bowl, then add the chicken and toss to coat. Cover the bowl and refrigerate for 10 minutes.
  • In a wok or large frying pan over medium-high heat, warm the oil. Cook the chicken in batches, stirring occasionally, until golden brown, about 3-4 minutes. Set aside and keep warm. Combine honey, lemon juice, soy sauce, and sesame oil.
  • Add the chicken back to the pan, pour in the honey mixture, and stir-fry for 2-3 minutes. Mix in the green onions until well combined. Garnish with coriander and enjoy with rice or steamed Asian greens like choy sum or gai laan.
