Ring in the Chinese New Year with homemade honey prawns.
Ingredients:
  • 5.00 gm cornflour
  • 127.50 gm chicken style liquid stock
  • 117.98 gm honey
  • 27.30 gm peanut oil
  • 1kg medium green prawns, peeled, tails intact, deveined
  • 1 medium carrot, peeled, halved, sliced diagonally
  • 1 garlic clove, crushed
  • 6.00 gm sesame seeds
  • 150g snow peas, trimmed
  • 4 green onions, cut into 5cm lengths
Instructions:
  • In a jug, vigorously whisk together cornflour and 1 tablespoon of stock until smooth. Next, blend in honey and the rest of the stock.
  • Preheat your wok over medium-high heat, then add 1 tablespoon of oil, swirling it around to coat the surface. Stir-fry the prawns in batches for 2 to 3 minutes until they are just starting to turn pink. Transfer them to a bowl.
  • Heat the remaining oil in a wok until hot. Add the carrot and stir-fry for 3 to 4 minutes until just tender. Then, add the garlic, sesame seeds, and snow peas, and stir-fry for an additional 2 minutes.
  • Add the prawns back to the wok along with the honey mixture and green onion. Stir-fry for 2 minutes or until the sauce boils, thickens, and the prawns are fully cooked. Serve hot.
