Elevate honey prawns with Japanese flair, paired with rice and crispy nori.
Ingredients:
  • 185ml (3/4 cup) iced water
  • 1 egg, lightly whisked
  • 24.00 gm sesame seeds
  • 115g (3/4 cup) self-raising flour
  • 0.60 gm salt
  • 375ml (1 1/2 cups) vegetable oil
  • 24 medium green king prawns, peeled leaving tails intact, deveined
  • 4 nori sheets, cut into 5mm strips
  • 125ml (1/2 cup) pure honey
  • Steamed jasmine rice, to serve
Instructions:
  • Prepare 2 baking trays by lining them with paper towel. In a bowl, mix together water, egg, and half of the sesame seeds. Then, add flour and salt, and whisk until just combined.
  • Preheat the oil in a wok over high heat to 180°C (test readiness by checking for golden brown color in a bread cube within 15 seconds). Using tongs, coat one-quarter of the prawns in batter individually. Deep-fry in the wok for 2 minutes until they are golden, crispy, and cooked through. Place on a prepared tray. Repeat with the remaining prawns in 3 separate batches, ensuring to reheat the oil between each batch. Once done, take the wok off the heat and fry nori strips for 30 seconds until crispy. Drain on paper towel.
  • Empty the wok of any excess liquid. Warm the honey in the wok over medium heat until melted. Toss in the prawns and cook while stirring for 1 minute.
  • Divide rice into bowls. Add nori and prawns on top. Sprinkle with the rest of the sesame seeds. Finish with a drizzle of pan juices and serve right away.
