Easy, veggie-packed stir-fry for a quick Thursday dinner.
Ingredients:
  • 1 bunch bok choy, trimmed and chopped and roughly chopped
  • 50g snow peas, trimmed
  • 450g hokkien noodles
  • 42.00 gm salt-reduced soy sauce
  • 28.60 gm honey
  • 1 tsp finely grated ginger
  • 3 small chicken breast fillets, sliced into thin strips
  • 100g baby corn, halved diagonally
Instructions:
  • In a hot wok or large frying pan, sizzle half a teaspoon of peanut oil. Add chicken and cook for 3 minutes until perfectly done. Take it off the heat.
  • Drizzle an additional 1/2 teaspoon of fragrant peanut oil into the pan and toss in the ginger, bok choy, and baby corn. Sauté for 3 minutes, or until the vegetables are tender.
  • Add the chicken back to the pan along with the snow peas, noodles, soy sauce, and honey. Mix thoroughly, cook for an additional 2 minutes, and enjoy!
