Elevate your stir-fry with savory mushrooms, vibrant veggies, and a sweet garlic honey glaze for a simple yet flavorful Asian-inspired dish.
Ingredients:
  • 1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
  • 7 cloves garlic, sliced, or to taste
  • 4 tablespoons honey, or to taste
  • 4 tablespoons soy sauce, divided, or to taste
  • 2 (16 ounce) packages frozen Asian vegetable medley
  • 1 cup sliced mushrooms
  • 3 cups instant white rice (such as Minute®)
Instructions:
  • In a wok over medium heat, warm oil, then combine chicken and garlic. Season with salt and pepper and sauté until chicken browns, approximately 5 minutes. Drizzle honey and 1 tablespoon soy sauce over the chicken, ensuring it's well coated. Plate the chicken, leaving the delicious juices in the wok.
  • Toss in frozen vegetables, mushrooms, and the rest of the soy sauce into the wok. Sauté on medium heat until veggies are crisp outside and tender inside, roughly 7 minutes.
  • Combine the chicken back into the wok, allowing it to cook until fully cooked and the sauce thickens, usually about 5 to 10 minutes.
  • In a microwave-safe bowl, combine water and rice. Cover and microwave on high until all the water is absorbed, approximately 5 minutes.
  • Spoon the flavorful chicken and vegetables on top of steaming hot rice for a satisfying meal.
