Fire-roasted tomato basil soup pairs perfectly with grilled cheese.
Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 4 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon red pepper flakes
  • 1 (28 ounce) can fire-roasted crushed tomatoes
  • 2 cups tomato juice
  • 1 (15 ounce) can fire-roasted diced tomatoes, partially drained
  • 1 tablespoon white sugar
  • 0.5 cup heavy whipping cream
  • 1 bunch fresh basil, roughly chopped, or to taste
Instructions:
  • In a large pot over medium heat, melt butter with olive oil. Add onion and carrot, saute until softened, 4 to 6 minutes. Stir in garlic, salt, pepper, and red pepper flakes, cook until fragrant, about 2 minutes.
  • Combine crushed tomatoes, tomato juice, and diced tomatoes with the onions and bring to a gentle simmer. Mix in sugar and let it simmer for about 10 minutes. Pour in cream and heat for 1 to 2 minutes. Stir in basil and cook until wilted, approximately 3 minutes. Serve as is, or blend until smooth using an immersion blender.
