Create homemade crispy brownie brittle for a satisfyingly crunchy treat, without the need to purchase it pre-made.
Ingredients:
  • nonstick cooking spray
  • 0.33333334326744 cup butter
  • 2 (1 ounce) squares 65% dark chocolate, chopped
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon instant espresso powder
  • 0.5 cup unbleached all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon baking soda
  • 2 large egg whites
  • 0.5 cup mini chocolate chips
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and prepare a 13x18-inch baking sheet by lining it with parchment paper and lightly greasing it with nonstick spray.
  • In a microwave-safe bowl, melt the butter and chocolate in 30-second intervals, stirring between each interval. Mix in the sugar, vanilla, and espresso, then set aside.
  • Combine flour, cocoa powder, salt, and baking soda in a medium bowl, whisking until well blended.
  • In a large bowl, use an electric mixer to beat egg whites until frothy for 3 to 4 minutes. Add chocolate mixture and mix until combined. Incorporate flour mixture until a thick batter forms.
  • Smooth the batter onto the baking sheet, then cover it with plastic wrap. Flatten it thinly by pressing another baking sheet on top. Remove the top sheet, peel off the plastic, and sprinkle chocolate chips over the batter.
  • Bake until crisp in the preheated oven for approximately 25 minutes. Let the brittle cool on the baking sheet before breaking it into pieces.
