Elevate weeknight dining with quick and delicious homemade Hamburger Helper in just 30 minutes.
Ingredients:
  • 1 pound 80/20 ground beef
  • 1/2 cup finely chopped yellow onion
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 1/4 cups beef broth , divided
  • 1 cup milk
  • 1 cup uncooked elbow macaroni
  • 1 teaspoon cornstarch
  • 6 ounces shredded sharp Cheddar cheese (about 1 1/2 cups)
Instructions:
  • In a large skillet over medium-high heat, sear the beef and onion until browned, breaking up the meat as it cooks, for about 5 minutes. Remove any excess fat before proceeding.
  • Enhance the flavor: Combine tomato paste, chili powder, garlic powder, salt, and pepper. Cook while stirring for about 1 minute until fragrant.
  • Combine 2 cups of beef broth in a pot and bring it to a rapid boil. Stir in the milk and macaroni, then lower the heat to medium. Let it simmer uncovered, stirring occasionally, until the pasta is al dente, for about 10 to 12 minutes.
  • To thicken the sauce, combine cornstarch and the remaining 1/4 cup of beef broth in a small bowl. Pour the mixture into the skillet and simmer over medium heat. Stir frequently until the sauce thickens slightly and turns glossy, approximately 3 minutes.
  • Stir in the cheese until fully melted and incorporated, then let it sit for 5 minutes to thicken before serving. Refrigerate any leftovers in an airtight container for up to 4 days.
