Homemade diner-style burgers made easy with Hamburger Helper sloppy joe mix.
Ingredients:
  • 1 large onion, cut into 1/4-inch rings
  • 1 cup buttermilk
  • 1/3 cup Progresso™ panko crispy bread crumbs
  • 1/3 cup Progresso™ plain bread crumbs
  • 1/3 Corn Chex™ cereal, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lb lean (at least 80%) ground beef
  • 1 small onion, chopped (1/4 cup)
  • 1 box Hamburger Helper™ sloppy joe
  • 1 2/3 cups milk
  • 1 1/3 cups hot water
  • 1/4 cup barbecue sauce
  • 1/2 cup frozen corn (from 12-oz bag)
  • 6 to 8 hamburger buns, split
Instructions:
  • In a medium bowl, coat onion rings with buttermilk and let soak for 30 minutes.
  • Preheat oven to 400°F and lightly coat a cookie sheet with cooking spray. Beat an egg in a shallow bowl. In a separate bowl, combine bread crumbs, cereal, salt, and pepper.
  • Pat dry the onion rings, getting rid of the buttermilk. Coat the onion rings in egg, then cover with the crumb mixture. Arrange them on a baking sheet and bake for 10 to 13 minutes until golden brown.
  • In a 10-inch skillet over medium-high heat, sauté beef and onion, stirring often, for 5 to 7 minutes until beef is fully cooked and onion is soft. Drain excess grease.
  • Combine uncooked pasta, sauce mix, milk, hot water, barbecue sauce, and corn in a pot. Bring to a boil, stirring occasionally. Reduce heat, cover, and simmer for about 10 minutes until pasta is tender. Remove from heat and let stand for 5 minutes to allow the sauce to thicken.
  • Stack the bun bottoms with a generous portion of sloppy joe mixture, add 1 or 2 onion rings on top, and finish by placing the bun tops to complete the dish.
