Instant Pot Panburger Helper: Quick weeknight meal ready in 45 minutes. Perfect for busy nights, serve with a side salad.
Ingredients:
  • 1 pound lean ground beef
  • 1 cup finely diced onion
  • 2 tablespoons taco seasoning mix
  • 1 tablespoon minced garlic
  • 1 teaspoon dried parsley
  • 0.5 teaspoon chili powder
  • 2 cups beef broth
  • 2 cups canned diced tomatoes, with juices
  • 2 cups elbow macaroni
  • 0.5 cup sour cream
Instructions:
  • Preheat a multi-functional pressure cooker like an Instant Pot on the Saute function. Cook beef, breaking it up as it browns, for about 5 minutes. Drain in a colander to remove excess fat.
  • Add the beef back to the Instant Pot along with onion. Sauté for 3 minutes. Mix in taco seasoning, garlic, parsley, and chili powder. Stir and cook for 1 minute. Deglaze the pot with a dash of beef broth, scraping up any brown bits. Pour in the rest of the broth and tomatoes. Stir well. Add macaroni, ensuring noodles are fully covered in liquid. Seal the lid and switch off Saute mode.
  • Follow your pressure cooker's guidelines to select high pressure, then set the timer for 3 minutes. Give it 10 to 15 minutes for the pressure to build up.
  • Allow pressure to release naturally as per the manufacturer's guidelines for 5 minutes. Carefully perform a quick pressure release for the remaining 5 minutes. Unlock, remove the lid, and serve with a dollop of sour cream.
