Whip up delicious homemade salsa verde in your Instant Pot for a fresh and flavorful upgrade from store-bought options.
Ingredients:
  • 1.25 pounds tomatillos, husked and quartered
  • 2 large jalapenos, halved lengthwise
  • 1 medium onion, peeled and quartered
  • 0.25 cup water
  • 2 teaspoons minced garlic
  • 0.25 cup firmly packed fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon salt
Instructions:
  • In the inner pot of a multi-functional pressure cooker, mix tomatillos, jalapenos, onion, water, and garlic. Lock the lid and select high pressure for 10 minutes following the manufacturer's instructions. Let the pressure build for 10 to 15 minutes.
  • Carefully release pressure using quick-release method following manufacturer's instructions for 5 minutes. Unlock and remove the lid, then allow to cool for 10 minutes.
  • Combine fresh cilantro, zesty lime juice, and a pinch of salt into the mixture. Puree the ingredients with an immersion blender until silky smooth.
  • Pour the mixture into two pint-sized canning jars with lids. Chill in the refrigerator until it is cool and thick.
