Whip up Instant Pot salsa using canned tomatoes for a quick and easy alternative to traditional canning.
Ingredients:
  • 1 (28 ounce) can crushed tomatoes
  • 1 small onion, diced
  • 2 jalapeno peppers, seeded and diced
  • 0.25 cup white distilled vinegar
  • 0.25 cup water
  • 2 teaspoons sea salt
  • 2 teaspoons minced garlic
  • 0.5 teaspoon ground cumin
  • 0.5 cup chopped fresh cilantro
  • 1 tablespoon lime juice
Instructions:
  • In a multi-functional pressure cooker, mix together tomatoes, onion, jalapeño peppers, vinegar, water, sea salt, garlic, and cumin. Seal the lid, set to high pressure for 15 minutes following the manufacturer's guidelines, and allow pressure to build for 15 minutes.
  • Safely vent the pressure using the quick-release method as per the manufacturer's guidelines for about 1 minute. Then, unlock and lift off the lid.
  • Remove the pot from the heat and allow it to cool for 5 minutes. Gently mix in fresh cilantro and a splash of zesty lime juice.
