Homemade Instant Pot chicken breast stir-fry, a healthier twist on takeout. Enjoy with rice.
Ingredients:
  • 14 ounces chicken breast, cut into 1-inch cubes
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin (Japanese sweet wine)
  • 0.75 cup water
  • 2 tablespoons mirin (Japanese sweet wine)
  • 2 tablespoons hoisin sauce
  • 2 teaspoons sesame oil
  • 1 teaspoon peanut oil
  • 0.75 cup raw cashews
  • 1 tablespoon white sesame seeds
  • 1 tablespoon black sesame seeds
  • 1 tablespoon peanut oil
  • 2 cups green bell peppers, cut into 1-inch pieces
  • 1 medium onion, cut into eighths
  • 1 clove garlic, minced
  • 1 (8 ounce) can baby corn, drained and cut into bite-size pieces
  • 1 (8 ounce) can sliced water chestnuts, drained
Instructions:
  • In a mixing bowl, coat chicken pieces with cornstarch until fully covered. Drizzle with 1 tablespoon soy sauce and 1 tablespoon mirin, then stir thoroughly. Set aside.
  • In a small bowl, mix together water, soy sauce, mirin, hoisin sauce, and sesame oil. Whisk until combined and set aside.
  • Heat up your multi-functional pressure cooker using the Saute function. Add 1 teaspoon of peanut oil along with cashews, white sesame seeds, and black sesame seeds. Toast everything evenly for about 3 minutes until fragrant. Then, add 1 tablespoon of peanut oil, bell peppers, onion, and garlic. Saute until the vegetables are soft and the garlic is fragrant, about 5 minutes. Next, stir in the chicken mixture followed by the soy sauce mixture, baby corn, and water chestnuts until well combined.
  • Securely seal the lid and choose high pressure as per the manufacturer's guidelines. Set the timer for 3 minutes and wait for 10 to 15 minutes for pressure to build.
  • Release pressure gently following the quick-release method as per the manufacturer's guidelines for approximately 5 minutes. Unlock and lift the lid. Stir well and serve right away.
