Upgrade your classic hamburger helper with fresh spices, a touch of tomato, and loads of beefy, cheesy goodness. Perfect for a weeknight family dinner!
Ingredients:
  • 1 pound 85/15 lean ground beef
  • 1/2 cup finely chopped yellow onion (from 1 small [6 oz.] onion)
  • 2 tablespoon tomato paste
  • 1 tablespoon ketchup
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 3 1/2 cups beef broth
  • 1 cup uncooked elbow macaroni
  • 6 ounces sharp Cheddar cheese, shredded
Instructions:
  • Prepare all ingredients.
  • 1. Preheat a large, heavy-bottomed pot over medium-high heat. Cook beef and onion until beef is crumbled, browned, and no longer pink, stirring occasionally for about 7 minutes. Remove any excess fat before continuing.
  • Add the tomato paste, ketchup, garlic powder, chili powder, salt, paprika, and pepper to the mixture. Cook while stirring constantly until fragrant, approximately 2 minutes.
  • Pour in flavorful beef broth and bring it to a lively boil over high heat. Mix in the macaroni and lower the heat to medium. Allow the pasta to gently simmer uncovered, stirring occasionally, until it is tender and has absorbed most of the liquid, about 13 to 15 minutes.
  • Take the pan off the heat and mix in the Cheddar until it's completely melted and blended, which should take about 30 to 45 seconds. Allow it to thicken for approximately 2 minutes before serving.
