Cheesy and creamy filling with tofu and spinach for a delicious twist on classic lasagna.
Ingredients:
  • 1 (16 ounce) package uncooked lasagna noodles
  • 1 pound mozzarella cheese, shredded
  • 1 (15 ounce) container ricotta cheese
  • 1 pound firm tofu
  • 1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
  • 2 cups grated Parmesan cheese
  • 1 (28 ounce) jar pasta sauce
Instructions:
  • 1. Boil a big pot of salted water. Add lasagna noodles and cook for 5 to 8 minutes until slightly underdone. Drain and rinse the noodles.
  • Combine grated cheese, ricotta cheese, tofu, frozen spinach, and 1 cup Parmesan cheese in a large mixing bowl.
  • Place a noodle flat. Spread cheese mixture evenly on top, followed by a thin layer of sauce. Roll up the noodle and position seam side down in a 13x9 pan. Repeat for remaining noodles. Finish by covering with remaining sauce and Parmesan cheese.
  • Place in a 350°F (175°C) preheated oven and bake for 30 minutes, or until hot and bubbly.
