Ingredients:
  • 2 lb medium russet potatoes, peeled
  • 1/3 to 1/2 cup milk
  • 1/4 cup butter or margarine, softened
  • 1/2 teaspoon salt
  • Dash of pepper
Instructions:
  • Place potatoes in a 2-quart saucepan and add enough water to just cover the potatoes. Bring to a boil, then simmer covered for 20 to 30 minutes until potatoes are tender. Drain the potatoes and shake the pan over low heat to dry them out for fluffier mashed potatoes.
  • Smoothly mash potatoes in pan until all lumps are gone. Gradually pour milk, mashing well after each addition (adjust amount of milk based on potato variety).
  • Mash potatoes with butter, salt, and pepper until light and fluffy. For extra flair, top with butter pieces, paprika, fresh parsley, or chives.
