Try this delicious sweet green tomato chutney for a unique way to enjoy unripened tomatoes.
Ingredients:
  • 2 pounds green tomatoes, chopped
  • 1 pound cauliflower, chopped
  • 1.5 pounds onions, chopped
  • 2.5 pounds brown sugar
  • 3 cups distilled white vinegar
  • 1.25 cups all-purpose flour
  • 2.5 teaspoons ground turmeric
  • 2.5 teaspoons dry mustard powder
  • 2.5 teaspoons curry powder
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground ginger
  • 1 cup distilled white vinegar
Instructions:
  • In a large pot, combine tomatoes, cauliflower, onion, sugar, and 3 cups of vinegar. Bring to a boil, then simmer on medium-low heat, stirring until the sugar dissolves, for 5 to 10 minutes.
  • Combine flour, turmeric, mustard, curry, nutmeg, clove, and ginger in a bowl. Mix in 1 cup of vinegar to make a thin paste. Stir this mixture into the simmering tomatoes. Cook until thickened, then simmer for 10 more minutes. Let it cool completely before refrigerating.
