Fall-inspired butternut squash and turkey lasagna with gooey cheese layers.
Ingredients:
  • 1 large butternut squash, peeled and cubed
  • 2 tablespoons olive oil, or as needed
  • 1 teaspoon dried sage
  • salt and ground black pepper to taste
  • 1 (20 ounce) jar spicy red pepper marinara sauce
  • 1 small yellow onion, diced
  • 4 cloves minced garlic, divided
  • olive oil, divided
  • 1 (16 ounce) bag fresh spinach
  • 1 pound 93% lean ground turkey
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon crushed red pepper
  • 9 lasagna noodles
  • 10 ounces ricotta cheese, or more to taste
  • 2 large eggs
  • 1 cup shredded low-fat mozzarella cheese
  • 0.5 cup shredded Parmesan cheese
Instructions:
  • Preheat oven to 375°F (190°C).
  • Mix together the butternut squash, olive oil, sage, salt, and black pepper in a bowl until evenly coated. Spread the mixture onto a baking sheet.
  • Roast in the oven until tender, approximately 20 minutes.
  • Warm marinara sauce in a saucepan over low heat for about 5 minutes. In a saute pan over medium heat, cook onion and 2 garlic cloves in 1 tablespoon olive oil until golden brown, about 5-7 minutes. Add the onion mixture to the marinara sauce, then remove from heat.
  • In a saute pan over medium heat, warm 1 tablespoon of olive oil. Cook spinach until wilted, approximately 3 minutes. Place on a paper towel-lined plate to absorb moisture before transferring to a bowl. In the same pan, combine turkey, remaining garlic, Italian seasoning, and crushed red pepper. Cook until browned, about 5 to 7 minutes. Season with salt and black pepper, then mix well with the spinach in the bowl.
  • Take out the roasted butternut squash and keep the oven on.
  • 1. Boil a large pot of lightly salted water. Add lasagna noodles and cook until al dente, about 8 minutes. Stir occasionally. Drain and lay noodles individually on a plate to prevent sticking.
  • Blend the cooked butternut squash, ricotta cheese, and eggs in a bowl until creamy.
  • Start by elegantly spreading a delicate layer of marinara sauce on the base of a 9x13-inch baking pan. Place 3 lasagna noodles over the saucy canvas, then add dollops of ricotta mixture and a sprinkle of ground turkey. Repeat this tantalizing pattern 2 more times. Finish this masterpiece with a luxurious topping of mozzarella and Parmesan cheese.
  • Place the dish in a preheated oven and bake for roughly 45 minutes. Allow it to cool for 10 minutes before slicing.
