Craft a dazzling birthday cake to delight kids with this easy-to-follow recipe.
Ingredients:
  • 2 x 340g packets golden butter cake mix
  • 1 quantity icing (see related recipe)
  • blue food colouring
  • 2m flat liquorice (for wheel covers and trim)
  • liquorice allsorts (for detailing)
  • 1 musk stick lolly (for exhaust pipe)
  • 1 cream wafer biscuit (for radiator grill)
  • 1 malt stick biscuit (for bumper bar)
  • 2 jubes (for lights)
  • 4 mini Wagon Wheels (for wheels)
  • 4 dark choc melts (for hubcaps)
  • 9 chocolate flakes (for logs)
Instructions:
  • Prepare the loaf pan and square cake pan by greasing and lining them accordingly: the loaf pan should be 7cm deep and 11cm x 20cm at the base, and the square cake pan should be 4cm deep with a 23cm base.
  • Preheat the oven to 180°C. Prepare both cake mixes according to the package instructions. Pour one-third of the batter into a loaf pan and the rest into a square cake pan. Bake side by side in the oven for 30 minutes for the loaf pan and 45 minutes for the square cake pan. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  • Slice each cake in half and shape as needed according to picture 1. Remove X-marked portion and trim. Arrange on cake board, securing cabin with skewer as shown in picture 2.
  • - Set aside 1/4 cup of icing. Color the rest blue. Reserve 1/4 teaspoon of uncolored icing. Use the uncolored icing to outline the front and side windscreens. Cover the rest of the cake with the blue icing.
  • Prepare a variety of colorful candies like flat liquorice, liquorice allsorts, musk stick, biscuits, and jubes for decorating the truck as shown in the main picture. Use scissors to cut flat liquorice into thin strips to outline the truck shape.
  • 1. Quickly heat the knife under hot water and dry thoroughly. Glide the warm knife over the center of a Wagon Wheel to slightly melt the chocolate. Press a chocolate melt onto the center of the Wagon Wheel to create a wheel shape. Repeat for the remaining Wagon Wheels and melts. Press them onto the cake in wheel positions. Place flat pieces of licorice over the wheels to create mudguards.
  • Cut a square of white fondant and a square of colored fondant from liquorice allsorts. Cut out the number (child's age) from the colored square and press it onto the white square. Use the remaining uncolored icing to attach it to the cake in the number plate position.
  • Halve the flakes and arrange them neatly on the back of a truck.
