Big Bob's Big Brunch Quesadillas

Fluffy eggs and sauteed veggies wrapped in cozy tortillas.
Ingredients:
  • 0.5 small onion, chopped
  • 0.5 tomato, chopped
  • 1 jalapeno pepper, seeded and minced
  • 1 sprig fresh cilantro, chopped
  • 6 eggs, beaten
  • 4 (10 inch) flour tortillas
  • 2 cups shredded Cheddar cheese
  • 0.25 cup sour cream, for topping
  • 0.25 cup guacamole, for topping
Instructions:
  • Sear the chopped onion, tomato, jalapeno, and cilantro in a hot skillet until softened.
  • Once the vegetables have softened, gently crack the eggs into the pan. Let the eggs cook until one side is fully set, then carefully flip and cook the other side until desired doneness.
  • Once the eggs are done cooking, warm the tortillas in the skillet. Place a tortilla on a plate, then add the egg mixture and shredded cheese. Finish each serving with a dollop of guacamole and sour cream, 1 tablespoon of each.
