Delicious Cajun shrimp soup with rice and flavorful spices in a tomato broth.
Ingredients:
  • 0.25 cup sliced green onions
  • 3 cups tomato-vegetable juice cocktail
  • 1 (8 ounce) bottle clam juice
  • 0.5 cup water
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon red pepper flakes
  • 1 bay leaf
  • 0.5 cup uncooked long-grain white rice
  • 0.75 pound fresh shrimp, peeled and deveined
  • hot pepper sauce to taste
Instructions:
  • In a large pot over medium heat, melt butter until sizzling. Add bell pepper, onions, and garlic; cook until they are soft and fragrant. Pour in vegetable juice, clam juice, water, salt, thyme, basil, red pepper flakes, and bay leaf; bring it all to a boil.
  • Add rice to the pot, then lower the heat, cover, and let it simmer until the rice is tender, approximately 15 minutes. Introduce the shrimp and cook until they turn opaque, which takes about 5 minutes. Remove the bay leaf and season with hot sauce before serving.
