Irresistible pecan thumbprint cookies with a nest-like design. Perfect on their own or filled with creamy frosting and Easter candy.
Ingredients:
  • 1 cup butter, softened
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 cups chopped pecans
  • 0.25 cup warm water
  • 0.75 cup shortening
  • 1 teaspoon vanilla extract
  • 0.25 cup butter, softened
  • 4 cups confectioners' sugar
Instructions:
  • Preheat the oven to 350°F (175°C) and grease the cookie sheets lightly.
  • In a large bowl, use an electric mixer to cream together 1 cup of softened butter and ½ cup of sugar until smooth. Mix in the egg yolks thoroughly, then add the flour and mix until well combined.
  • Roll the dough into walnut-sized balls, then coat each ball in egg white followed by the chopped nuts. Arrange the cookies 2 inches apart on the prepared baking sheets and gently press the center of each cookie with your thumb.
  • Bake cookies in the preheated oven for 8 minutes. Press the center of the cookie again and bake until lightly browned, 4 to 6 minutes. Cool cookies on racks.
  • Prepare a luscious frosting by combining water, shortening, vanilla, and 1/4 cup of softened butter in a blender. Gradually incorporate confectioners' sugar until the mixture is velvety and smooth. Adjust the consistency by adding more water if needed.
