New Mexico's classic Christmas cookie, Biscochitos, are anise-spiced shortbread treats dusted with cinnamon-sugar, perfect for the holidays.
Ingredients:
  • 6 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 2 cups lard, softened
  • 2 teaspoons anise seed
  • 0.25 cup brandy
  • 1 tablespoon ground cinnamon
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) and sift together flour, baking powder, and salt in a bowl, setting it aside for later.
  • In a large bowl, use an electric mixer to cream together lard and 1 ½ cups of sugar until smooth. Mix in anise seed until fluffy. Add eggs one at a time, then stir in brandy. Mix in the flour mixture to form a dough.
  • Roll out the dough to a thickness of 1/4 or 1/2 inch using a floured rolling pin. Cut the dough using a fleur-de-lis cookie cutter or any other simple shape you prefer. Transfer the cookies to ungreased baking sheets. Combine 1/4 cup of sugar and cinnamon in a small bowl, then sprinkle it over the cookies.
  • Bake until the edges turn a beautiful golden brown, approximately 10 minutes, in the preheated oven.
