Quick and flavorful Puerto Rican beef stew with marinated steak, perfect for busy nights. Serve with white rice and tostones. Can use water instead of beef stock.
Ingredients:
  • 2 pounds beef sirloin steak, sliced thinly across the grain
  • 0.5 cup olive oil
  • 2 tablespoons minced garlic
  • 1 pinch dried oregano
  • 1 (.18 ounce) packet sazon seasoning
  • 2 large white onions, sliced into rings
  • 1 cup beef stock
Instructions:
  • Place the steak, olive oil, garlic, oregano, sazon seasoning, onions, vinegar, beef stock, and salt in a large resealable bag. Seal it and shake well to combine. Refrigerate for a minimum of 4 hours, or ideally up to 48 hours.
  • Heat the entire contents of the bag in a large deep skillet until boiling. Then, lower the heat, cover, and simmer for about 40 minutes until the beef is fork-tender.
