Bittersweet chocolate cake with olive oil ganache

Decadent chocolate cake with honey, hazelnut meal, and rich chocolate ganache.
Ingredients:
  • 100g dark chocolate, chopped
  • 178.75 gm honey
  • 100.00 gm hazelnut meal
  • 140.00 gm coconut flour
  • 32.50 gm cocoa powder
  • 113.75 gm extra virgin olive oil
  • 4 eggs, separated
  • 8.80 gm vanilla extract
  • 84.98 gm milk
  • 200g dark chocolate, chopped
  • 27.30 gm extra virgin olive oil
  • 28.60 gm honey
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 6cm-deep, 20cm round cake pan and line the base and sides with double layers of baking paper for easy release.
  • In a small saucepan over medium heat, combine the chocolate and honey. Cook for 5 minutes, stirring occasionally, until the chocolate has melted and the mixture is smooth. Let it cool for 15 minutes.
  • With an electric mixer, combine hazelnut meal, flour, cocoa powder, oil, egg yolks, vanilla, and milk until smooth. Then, mix in the cooled chocolate mixture until well combined.
  • In a separate bowl, whip egg whites until they form soft peaks. Gently fold in half of the whipped egg whites into the chocolate mixture until just combined. Then, fold in the rest of the egg whites; the mixture will be thick.
  • Transfer the mixture into the prepared pan and use a spatula to even out the top. Bake for 45 minutes or until a skewer inserted in the center comes out clean. Let it cool in the pan for 20 minutes, then flip it onto a wire rack lined with baking paper to cool completely.
  • Prepare the Olive Oil Ganache while you wait.
  • Combine chocolate, oil, and honey in a saucepan over medium heat. Stir constantly for 5 minutes until the chocolate is melted and the mixture is smooth. Let it cool for 20 minutes.
  • Place the cake on a beautiful serving plate and generously spread the velvety ganache over the top, ensuring every inch is covered. Let it sit for 30 minutes to let the ganache set slightly before serving. Enjoy!
