Skinny Bittersweet Chocolate Cake with Berries

Indulge guilt-free in this decadent almost flourless chocolate cake with 72% less fat and 36% less cholesterol than the original recipe. Pure chocolate bliss with almost half the calories!
Ingredients:
  • Nonstick cooking spray
  • 3/4 cup sugar
  • 1/2 cup water
  • 1 tablespoon instant espresso coffee powder or 2 tablespoons instant coffee powder
  • 3 ounces bittersweet or semisweet chocolate, chopped
  • 2 egg yolks
  • 1 teaspoon vanilla
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup Gold Medal™ all-purpose flour
  • 1/4 teaspoon baking powder
  • 5 egg whites
  • Unsweetened cocoa powder (optional)
  • 1/2 of an 8-ounce container Cool Whip lite frozen whipped topping, thawed
  • 1 1/2 cups fresh fruit - raspberries, blackberries, and/or blueberries
Instructions:
  • Preheat your oven to 350°F and lightly grease a 9-inch springform pan with nonstick cooking spray. In a medium saucepan, combine sugar, water, and espresso powder. Cook and stir over medium-low heat until the sugar dissolves and the mixture is almost boiling. Add chocolate and stir until melted. Remove from heat. Place egg yolks in a small bowl. Slowly mix in the chocolate mixture, then stir in the vanilla. Let this delicious mixture sit for a moment.
  • Combine cocoa powder, flour, and baking powder in a medium bowl. Mix in the chocolate-egg yolk mixture until smooth. In a separate large bowl, use an electric mixer to beat egg whites until stiff peaks form. Gently fold a bit of the beaten egg whites into the chocolate mixture to lighten it, then fold in the rest of the egg whites. Spread the batter in the prepared pan.
  • Bake for around 30 minutes or until the top bounces back when lightly pressed. Allow to cool in the pan on a wire rack for 10 minutes, then gently release the sides of the pan and cool entirely. (Cake may deflate slightly but evenly as it cools.)
  • Serve the cake wedges on dessert plates. Optionally, sprinkle with more cocoa powder before adding whipped topping and berries on top.
