Bittersweet chocolate mud cake

Indulge in a decadent chocolate mud cake for a satisfying sweet treat.
Ingredients:
  • 3 x 200g blocks good quality dark chocolate
  • 375g butter, chopped
  • 250ml water
  • 180.00 gm firmly packed brown sugar
  • 375.00 ml plain flour
  • 49.50 gm self-raising flour
  • 4 x 55g eggs, lightly beaten
  • 80ml marsala
  • 125ml cream
  • 150g dark chocolate, broken into pieces
  • 20g unsalted butter
  • 25.00 gm liquid glucose
Instructions:
  • Preheat your oven to 160C. Grease and line a 20 cm deep cake pan with baking paper, making sure the paper extends 4cm above the edge of the pan.
  • Roughly chop the chocolate. Melt it with butter, water, and sugar in a heavy-based pan over low heat, stirring until smooth. Allow to cool for 20 minutes before proceeding.
  • Combine the sifted flours, eggs, and marsala until well mixed. Transfer the mixture to a cake pan. Bake for 1 hour and 50 minutes, and cover the top of the cake with foil after 1 and a half hours to avoid a dark crust. Allow the cake to cool in the pan.
  • In a saucepan, combine the glaze ingredients. Stir over gentle heat until velvety. Let it cool for 15 minutes until slightly thickened. Drizzle over cake and let it set. Enjoy with a dollop of rich cream.
