Black Bean Quinoa Veggie Burgers

Flavorful veggie burgers made with black beans, quinoa, hoisin sauce, sesame oil, and garlic for a delicious and hearty meal.
Ingredients:
  • 2 cups vegetable broth
  • 1 teaspoon hoisin sauce
  • 0.5 teaspoon sesame oil
  • 1 cup uncooked quinoa
  • 1 cup canned black beans - drained, rinsed, and mashed
  • 1 slice bread
  • 2 tablespoons water
  • 1 small clove garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 3 tablespoons canola oil, or as needed
Instructions:
  • In a saucepan, bring vegetable broth, hoisin, and sesame oil to a boil. Add quinoa and simmer covered on low heat for about 20 minutes until tender. Remove from heat and let it cool slightly.
  • In a bowl, thoroughly mash together black beans, eggs, bread, water, garlic, salt, and pepper. Mix in 1 1/2 cups of cooled quinoa until well combined.
  • In a large skillet, heat canola oil over medium-high heat. Shape each burger patty using 1/2 cup of the mixture and place in the skillet. Cook until golden brown on each side for approximately 3 minutes. Transfer to a paper towel-lined dish to drain.
